  • 4 salmon fillets (or 1 lb cubed salmon)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the marinade by whisking together sriracha, honey, soy sauce, minced garlic, lime juice, and sesame oil.
  2. Marinate the salmon in half of the mixture for 15 minutes; reserve the rest for glazing.
  3. Preheat your oven to 400°F (200°C) and toss cauliflower with olive oil, salt, and pepper before roasting until golden.
  4. Cook the marinated salmon in a skillet over medium-high heat until golden brown, then add the reserved marinade to create a glaze.
  5. Assemble bowls with rice topped with roasted cauliflower and glazed salmon. Garnish as desired.
