  • 1 cup lemon juice (freshly squeezed)

  • 0.5 cup granulated sugar (for filling)
  • 0.25 cup all-purpose flour (for filling)
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour (for crumble)
  • 0.5 cup granulated sugar (for crumble)
  • 0.25 cup unsalted butter (cold and cut into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together softened butter and both sugars until fluffy. Beat in one egg and vanilla extract, then mix in flour and baking powder until just combined.
  3. Press half of the cookie dough into a greased 9×13 inch baking pan.
  4. In another bowl, whisk together lemon juice, sugar, flour, salt, three eggs, and melted butter until smooth.
  5. Pour the lemonade filling over the cookie crust.
  6. Prepare the crumble by mixing flour, sugar, and cold butter until crumbly; sprinkle over the filling.
  7. Bake for about 40-45 minutes until golden brown on top.
  8. Allow to cool completely before slicing into squares.
