  • 9 sheets Graham Crackers (gluten-free if needed)
  • 1/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter (or coconut oil)
  • 2 cups Orange-fleshed Sweet Potatoes
  • 2 large Eggs
  • 1/2 cup Whole Milk (or almond milk)
  • 1/2 cup Heavy Cream (or coconut cream)
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Cloves

Instructions

  1. Preheat the oven to 350°F (175°C). Crush graham crackers into crumbs and mix with sugar and melted butter. Press into the bottom of a baking dish for the crust.
  2. Boil peeled sweet potatoes until soft (about 15 minutes). Mash until smooth.
  3. In a bowl, whisk eggs, milk, cream, sugar, and spices together. Fold in mashed sweet potatoes.
  4. Whip egg whites until stiff peaks form; gently fold into sweet potato mixture.
  5. Pour filling over the crust and bake for about 45 minutes until set. Cool completely before slicing.
