  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped; optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock (or dark beef broth)
  • 2 cups water (+ more as needed)
  • 2 tablespoons masa harina (for thickening if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Toast the dried peppers in a dry pan for 1-2 minutes on each side until fragrant. Let them cool, then remove stems and seeds.
  2. Soak the toasted peppers in hot water for about 20 minutes until soft.
  3. Blend soaked peppers with half a cup of soaking water and salt until smooth to create a chili paste.
  4. Toss cubed beef with cumin, salt, and pepper in a bowl.
  5. In a large pot, heat one tablespoon of olive oil over medium-high heat. Sear seasoned beef until browned on all sides (about 6-7 minutes). Remove from pot.
  6. Add remaining olive oil to the pot, sauté chopped onions and jalapeños for about five minutes.
  7. Stir in minced garlic and cook for an additional minute.
  8. Return seared beef to the pot, add chili paste, cook for another 2-3 minutes.
  9. Pour in beef stock, add brown sugar and masa harina if desired for thickness. Bring to boil then reduce heat to low.
  10. Simmer covered for about two hours or until beef is tender, stirring occasionally.
