  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear
  • 1 lemon
  • ½ cup chopped parsley
  • Freshly ground black pepper

Instructions

  1. Prepare the pear by peeling, slicing, and dicing it. Toss with lemon juice to prevent browning.
  2. Heat a large skillet over medium heat and cook turkey strips until golden brown. Remove and drain excess fat.
  3. In the same skillet, sauté shallots for about a minute before stirring in Dijon mustard.
  4. Add peas and pears to the skillet, cooking for five minutes until warmed through.
  5. Turn off the heat and fold in half of the crispy turkey strips along with parsley and black pepper.
  6. Serve in a bowl topped with remaining turkey strips and lemon zest.
