  • 1 tablespoon olive oil
  • 2 tablespoons prepared horseradish
  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 ½ tablespoons chopped parsley
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil. Roast for about 30 minutes until golden brown.
  2. Once cooled, squeeze out the roasted garlic cloves into a bowl. Add mayonnaise, horseradish, lemon juice, mustard, parsley, salt, and pepper.
  3. Blend until smooth using an immersion blender or food processor.
  4. Taste and adjust seasoning as desired.
